Editor: Get ready! It’s time for Colorado peaches.
Filling:
6 peaches, sliced
1 pint blueberries
¼ cup honey*
2 Tb. lemon juice*
1 Tb. flour*
1 tsp. ground cinnamon*
½ tsp. vanilla*
Topping:
1 c. unbleached flour*
3 Tb. butter*
½ c. buttermilk or thinned yogurt*
1 tsp. baking soda*
1 T. honey*
Pinch of salt*
Preheat oven to 400 degrees. Butter an 8” by 8” baking dish. Combine all filling ingredients. Pour into baking dish and spread evenly. In a bowl, mix flour, baking soda and salt together. Cut butter into the mixture until it resembles a coarse meal. In a small bowl, mix honey and buttermilk together. Pour this into flour mixture and stir until just blended. Drop by the spoonful on top of fruit. Bake about 15-20 minutes until golden. Serve hot with a scoop of vanilla ice cream. Bliss!
