Preheat oven to 425 degrees. Butter a 9 inch baking pan
1/4 cup honey
1 cup buttermilk or yogurt thinned with water
1 egg or egg replacer
1 c. defrosted and cooked frozen corn, drained
1-2 diced jalapenos with seeds removed
1 c. yellow corn meal
1 c. unbleached white flour
3 Tb. melted butter
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Beat together egg, buttermilk, corn, jalapenos and honey. Mix well together all dry ingredients. Combine all ingredients, including melted butter and mix well. Spread into 8″ square pan and bake for 20 minutes. Serve hot with butter and chunk of cheddar cheese.
