1 c. Lundberg Wild Rice Blend*
1/2 c. chopped celery
1 c. sliced mushrooms
1 small purple onion, chopped
1 clove garlic, minced
2 Tb. butter or olive oil
Rinse rice and put in pot with 3-4 cups of water. Bring to a boil and then turn down the heat and let simmer for at least 45 minutes. Drain the excess water off and set rice aside.
In a separate pan, saute vegetables and garlic in the butter or olive oil over a medium heat for 5-7 minutes. Add the teriyaki sauce and simmer until the liquid is absorbed. Stir in the rice and serve. Makes 4-6 servings.
*Wild Rice Blend
If you are unable to find the Lundberg Wild Rice Blend, you can also use Royal Blend Texmati White, Brown, Wild & Red Rice or Bob’s Red Mill Wild and Brown Rice.
