1/2 c. unsalted organic butter
3/4 c brown sugar
1 egg
1 cup unbleached flour
1/2 tsp ground cinnamon
1 tsp baking powder
1/4 tsp baking powder
1/4 tsp sea salt
3/4 c applesauce
1/2 c raisins
1 c quick rolled oats
1/2 c chopped walnuts or pecans
Cream the butter and gradually add brown sugar and continue to beatĀ until light and fluffy. Add the egg and mix well. Mix together the dry ingrdients and add alternately with the applesauce to the creamed mixture, stirring well after each addition. Add remaining ingredients and mix until well incorporated. Spoon into greased muffin cups. Bake at 350 oven for 25-30 minutesĀ until done. Cool on rack. Yield 12 muffins.
