2 lbs. gala apples, quartered and seeded (no need to peel)
2 lbs. quartered and pitted
1/4 c. water
1/4-1/2 c. honey, maple syrup or sugar
1 tsp. ground cinnamon

Cook first 4 ingredients in a heavy 4 quart pot over moderately low heat, stirring occasionally until fruit is tender and falling apart for about 1 to 1 1/2 hours. Alternatively, you can cook in an Instant Pot for 10-15 minutes.

To remove the skins and give it a nice smooth texture, run through a food mill using the finest blade. Add the cinnamon and stir in thoroughly. Pour into canning jars and seal.

Will keep for one week refrigerated or you can process using a water bath canning method to store it for up to one year.
