Serves about 4-6

INGREDIENTS:
2 Tb. butter
1 onion, chopped
1-2 chopped tomatoes
1 1/2 cup water
2 large potatoes, peeled and cubed
13 oz. frozen chopped green chili
1 tsp. chopped garlic
1 chopped jalapeno (opt.)
1 tsp. ground cumin
1 tsp. salt
ground black pepper to taste

DIRECTIONS:

  1. In a large pot over medium heat, heat the butter and brown the onions until onions are translucent, about 5 minutes.
  2. Add the chopped tomatoes, green chilies, potatoes, water, garlic, salt, pepper and cumin.
  3. Bring to a boil, reduce heat and simmer for about 1 hours. Add a little more water if needed during simmering.
  4. Ladle into bowls and top with grated cheddar cheese and serve with warmed corn or wheat tortillas
