1/2 c. millet
2 c. water
3 red medium-sized beet, cooked and peeled
2-4 Tb. besan (garbanzo) flour
ghee or vegetable oil, for frying
garlic powder
onion powder
chili powder
salt

Bring water to a boil and add the millet. Lower heat, cover and cook for 25-35 minutes until completely soft. At the same time you can cook the beets in a pressure cooker for about 20 minutes. After they cool, peel them and grate them in a food processor or by hand. Mix grated beets with the millet in a mixing bowl. Depending on the size of the beets, you may not need to add all of the millet. You want about equal parts beets to millet. Add enough besan flour to the mixture until it is firm enough to form patties and then add the spices you like to taste.

Coat a cast iron frying pan with a little oil and fry the patties over a medium high heat. Cook the patties until browned on each side. Serve with yogurt or sour cream and condiments of your choice and enjoy!
